The Passion of the C Pt 1

Hi All


Cake has been made, it doesn’t have the colour, the taste, or the moist texture of the carrot cakes of days gone by. I couldn’t find any of my old recipes given to me, so tried to adapt one with what I could remember. It was passed over to an independent judging panel, okay it was my nieces and my sister! (I think they should all put themselves forward for the vacancy coming up in American Idol, lol!) The unanimous verdict was, icing, filling is nice, cake too heavy! I think I have put too much curd in the middle and and left it looking not so pretty.







Well back to the mixing bowl!

The Passion of the C

Hi All

I have decided to make a carrot cake to go with my passion fruit curd. Carrot cake has been the cake I haven't mastered (yet!). Many forms of this cake has passed my lips through the years, given to me from my aunt, in-laws, friends of the family that you called auntie who weren't! All were moist, tasty, and moreish. Although I've been passed the recipes for these cakes, mine have never came out tasting anything like the above! I think the reason for this is my aversion to using oil in baking, it appears carrot cake has to be made with oil? yuk! I am not sure where my aversion came from, it could be due to the years I was forced to take a teaspoon of cod liver oil before I went to school, and the taste of oil that would stay with you for the rest of the day yuk!

Well, I am going to embark on the crusade mastering the carrot cake, without the oil, going to try using melted butter instead.

The Passion


Hi All
Long time! Long time! In the blogging world anyway! Two weeks since my last post! I know I have to give myself a slapped wrist, (not too hard as I need to type) the amount of times I have logged onto one of my favorite blogs, only to pull a contorted face of vexation, just because they haven’t posted something that morning! Well I take it all back (sorry my favorite bloggers), I will try and be more consistent.


The other day while gazing at my computer at my 9-5, I suddenly wanted to make something out of passion fruit, I’m not sure why as I am not a fan of the fruit, pre juiced in a box , yes, cutting scooping, and only getting a minimal amount of sweet flesh , just feels like way too much effort. What can I make? What can I make? How can I in cooperate it into a cake? Curd! I decided to make a passion fruit curd, I have never made this before, thought let’s give it a try. After looking through many recipes I settled on one (let’s all curtsey) from Nigella Lawson.


I must say this tastes fab! I wanted to eat it all before I put it in the jar, (eating curd from a hot pot, is not a good look!) Now what cake to use it with, mmm....

Buttercream

Hi All

It is after midnight on a Saturday night (or is it technically Sunday?) and what am I doing? Well it's not coming in from a night out on the razzel dazzle! Or I am finally getting myself ready to go on the razzle dazzle, nooo! I am trying to work out how to make my chocolate buttercream dark and chocolaty! For those of you who bake will understand how consumed you can get when things do not go how you want, lol! My chocolate buttercream in the fridge taste nice however has a grey colour to it, which I don't think looks nice, a bit like the girl I am watching on Song Marry or Avoid from the corner of my eye, while I am typing! Oh how I digress, anyway, I think I have worked out what I need to do, will try it later today??
